Deg bhapka distillation in one paragraph
Deg bhapka distillation is the traditional Indian method of making attar, in which flowers, herbs, roots or baked earth are heated with water in a copper still called a deg, and the fragrant steam travels through a bamboo pipe into a copper receiver called a bhapka that holds a base oil, usually sandalwood. Over hours or days, the oil absorbs the aroma and becomes attar.
The method has been practised for centuries in Kannauj and other perfume centres, and it remains largely unchanged. It relies on simple equipment, natural fuel and, above all, the experience of the distillers.
Understanding the process helps you appreciate why traditional attars smell the way they do, why they cost what they cost, and why no two batches are quite identical.
Visitors to Kannauj often describe the town's air as faintly scented in distilling season, especially near the older workshops.
The term itself is simple: deg and bhapka are the two copper vessels at either end of the process. Yet behind that simplicity lies a craft that has fed temples, royal courts, kitchens and dressing tables across India for centuries.

The equipment
The deg is a large, round-bellied copper pot set into a brick or clay furnace. Its lid is sealed with clay or cloth to keep steam from escaping.
A long bamboo pipe, called the chonga, connects the deg to the bhapka. The bamboo is wrapped in twine or cloth for insulation.
The bhapka is a long-necked copper receiver that sits in a tank of cool water. It holds the base oil, traditionally sandalwood, though other bases are also used today.
The furnace is fired with wood or dried cow dung, and the heat is adjusted by adding or removing fuel.
Copper is chosen because it conducts heat well and is believed to interact favourably with some aromatic compounds, contributing to the smooth character of traditional attars.
The clay seal on the deg lid, called a gil or similar term locally, must be checked and repaired often, since even a small leak of steam can affect the batch.
Much of this equipment is still made by local craftsmen, and a well-maintained copper deg can remain in use for many years.
Step by step
First, the raw material is loaded into the deg with water. For roses or jasmine, petals must be fresh; for mitti, baked clay discs are used; for khus, dried roots.
The deg is sealed and heated. As the water boils, steam carries aromatic compounds up through the bamboo pipe.
In the bhapka, the steam condenses into water and fragrant oil. The base oil absorbs the aroma. Excess water is periodically removed.
When the material in the deg is spent, it is replaced with fresh material, and the process repeats until the base oil is saturated with scent. This can take many cycles.
Workers often watch over the stills through long shifts, adjusting the fire and the cooling water by experience, as the process cannot simply be left to run on its own.
The cool water around the bhapka must be changed or refreshed regularly to keep condensation efficient, which adds to the labour involved.
After distillation, many attars are left to rest in leather bottles called kuppis or in glass, allowing excess water to separate and the scent to settle before sale.
The role of the distiller
Deg bhapka distillation depends heavily on human skill. Distillers judge the heat by the sound and feel of the equipment, the timing by experience and the saturation by smell.
Too much heat can scorch delicate flowers and spoil the scent. Too little and the extraction is weak.
Knowledge is often passed down within families over generations, and master distillers are highly respected.
This craftsmanship is why traditional attars are considered artisanal products rather than industrial ones.
Many distillers learn by working alongside elders for years before they are trusted to manage a batch on their own.
Distillers also learn when to stop. Over-distilling can extract unwanted, harsh notes, so judging the exact moment a batch is complete is a key part of the skill.
Seasons and raw materials
Deg bhapka follows the seasons. Roses are distilled in spring, jasmine and kewra in summer, mitti before the monsoon, and other materials at their own times.
Freshness is crucial for flowers, which are picked early and distilled quickly.
The base oil also matters. Sandalwood adds creaminess and longevity, while other bases change the character and price.
Because harvests vary with weather, each batch can smell slightly different, much like vintages of wine.
Some materials, such as vetiver roots, need soaking before distillation, while flowers must go in as fresh as possible.
For mitti, the clay discs are baked first, so the process combines pottery and perfumery in a way that is unique to India.
Why it shapes the scent
Slow hydro-distillation at moderate temperatures gives attars a soft, rounded, natural character. The sandalwood base blends seamlessly with the distillate.
Attars made this way often have a gentle, evolving profile on skin that differs from the sharper top notes of alcohol-based perfumes.
The method also explains why some attars smell slightly smoky or earthy, as a result of the fuel and copper equipment.
Connoisseurs value these nuances as signs of authenticity.
The use of sandalwood as the capturing medium also means the attar carries a soft woody base from the very first sniff.
Some connoisseurs also say that attars made in smaller degs are more refined, because the heat is easier to control, though this varies between workshops.
Challenges facing the craft
Deg bhapka is labour-intensive and physically demanding. Distillers work long hours near hot furnaces.
Rising costs of sandalwood, competition from synthetic perfumes and changing consumer tastes have challenged traditional distilleries.
Some makers have adapted by using alternative bases, modern packaging and online sales.
Supporting authentic makers helps keep this heritage alive.
Attempts to modernise the craft include government and industry training programmes, cooperative sales and better packaging, all of which aim to keep younger generations involved.
Climate change and unpredictable rain are also affecting harvests of roses, jasmine and vetiver, adding another layer of uncertainty to an already demanding craft.
Deg bhapka vs modern distillation
Modern essential oil production often uses stainless steel stills, controlled steam injection and electric or gas heating. These methods are faster, more consistent and easier to scale. They are widely used to produce oils for the global perfume and aromatherapy industries.
Deg bhapka, by contrast, is slow and hands-on. The direct firing, copper vessels and bamboo pipes create small variations in temperature and contact that subtly shape the final scent. The use of a base oil inside the receiver is also distinctive, since most modern distillation collects essential oil on its own.
Neither method is simply better. Modern distillation is excellent for producing pure essential oils efficiently, while deg bhapka is uniquely suited to making attars in the traditional Indian style, with their soft, rounded, sandalwood-carried character.
Some Kannauj distillers now combine methods, using modern equipment for certain steps while keeping deg bhapka for their signature attars. This balance helps the craft survive while meeting modern demand.
Even a short conversation with a seller about how their attar was made can deepen your appreciation of each bottle.
If you ever have the chance to visit Kannauj during distilling season, seeing deg bhapka in action is a memorable experience. The heat, the steam, the smell of roses or baked earth and the calm focus of the distillers give a new appreciation for every drop of attar you wear.
What this means for buyers
When you buy a traditionally distilled attar, you are paying for raw materials, time, skill and heritage. That explains why genuine attars cost more than synthetic oils.
Ask sellers whether an attar is deg bhapka distilled and what base is used. Transparent answers are a good sign.
Expect slight batch variation and appreciate it as part of the craft.
A small bottle of a well-made attar can be one of the most meaningful fragrances you own.
